Choux Pastry
Make 2
With light or golden brown, form an adjustable ring.
Rnd 1: Ch 1, 5 sc in ring, join - 5 sc.
Rnd 2: Ch 1, 2 sc in each st, join - 10 sc.
Rnd 3: Ch 1, 2 sc in each st, join - 20 sc.
Rnd 4: Ch 1, [sc in next st, 2 sc in next] 10 times, join - 30 sc.
Rnds 5-7: Ch 1, sc around, join - 30 sc.
Rnd 8: Work in bk lps from here and throughout. Ch 1, sc around, join - 30 sc.
Rnd 9: Ch 1, [sc in next st, sc dec] 10 times, join - 20 sc.
Rnd 10: Ch 1, sc dec around, join - 10 sc. Stuff lightly.
Rnd 11: Ch 1, sc dec around, join - 5 sc. Fasten off leaving a 2" tail. Weave tail through ft lps of remaining 5 sts and cinch tight to close.
Whipped Cream or Ice Cream
In the free lps of rnd 8 of choux pastry, sl st in first lp. Ch 4 (counts as first trc), trc around - 30 trc.
Fasten off leaving a long tail for sewing. Stitch the top of whipped cream or ice cream to the free lps of rnd 8 of other choux pastry.
Chocolate Ganache
Here are three styles pictured:
Rnd 1: Ch 1, 5 sc in ring, join - 5 sc.
Rnd 2: Ch 1, 2 sc in each st, join - 10 sc.
Rnd 3: Ch 1, 2 sc in each st, join - 20 sc.
Rnd 4: Ch 1, [sc in next st, 2 sc in next] 10 times, join - 30 sc. Fasten off. Sew or hot glue with ws facing up.
